Biografi Svein Halvor Knutsen

Jeg forsker på grunnleggende teknikker for analyse av karbohydrater og polysakkarider med relevans til mat og biologiske systemer. Dette innebærer isolering fra ulike plantemateriale som korn, poteter og alger og analyse av disse ved bruk av enzymer, ulike kromatografiteknikker og spektroskopi (NMR). Jeg undersøker også hva som skjer med karbohydrater generelt under prosessering til mat og under biologiske prosesser som f.eks fordøyelse og fermentering. Hovedvekten av mine aktiviteter er knyttet til komponenter i maten som er koblet til helse på en eller annen måte; sukker, kostfiber og f.eks akrylamid. Jeg har ledet ulike forskningsprosjekter relatert til kostfiber og deltatt i EU prosjekter koblet opp mot dette. Jeg dessuten engasjert i arbeidet rundt nye proteinkilder fra belgvekster og korn.
