Biografi Eva Veiseth-Kent
Jeg er forsker innen området råvare og prosess, og har jobbet her siden 2005. Jeg har jobbet mye med muskler og faktorer som påvirker spisekvalitet til kjøtt fra landdyr og fisk. Vi vet at kjøttkvalitet er sterkt påvirket av sammensetning og nedbryting av proteiner i musklene. Jeg har hatt spesielt fokus på den naturlige mørningsprosessen som skjer i musklene etter slakting, og har jobbet med ulike metoder for å studere denne prosessen i muskel. I tillegg har jeg hatt fokus på muskelvekst og fôrets betydning for proteinsammensetning og fysiologi til muskel og lever, spesielt i fisk. Metodemessig jobber jeg med både aktivitetsmålinger av ulike proteaser (kalpainer, katepsiner, MMPer), analyser av proteinnedbryting (Western blotting, immunohistokjemi), muskelhistologi og proteomikk.Jeg har også erfaring med og interesse for produksjonsteknologi, råvarevalg og tilsettingsstoffer som gjør det mulig å produsere sunnere matvarer, med spesielt fokus på salt- og fettreduksjon i kjøttprodukter.
Jeg er utdannet Næringsmiddelkandidat (1998) og har en doktorgrad i bioteknologi (2003) fra Universitetet for miljø- og biovitenskap (UMB). I forkant av mitt doktorgradsarbeid jobbet jeg ett år som gjesteforsker ved INRA i Frankrike og underveis i doktorgraden jobbet jeg tre år ved USDA U.S. Meat Animal Research Center. Etter doktorgraden jobbet jeg to år som postdoc ved UMB med studier av stress før slakting og muskelproteomikk hos laks.
