Coating of fish filet with a mixture of gelatin and extracts from meadowsweet (Filipendula ulmaria) gave the fish a protective film. The film reduces the rancidity of the fish during storage at 5 oC. The extracts also showed some antibacterial activity. Coating of the fish did not alter the color or taste.
