The aim of this project has been to increase the knowledge of additives allowed to be used in unprocessed fish. Furthermore, methods for use and effects on the products. Thus, a guide describing aspects of using additives, has been developed. In addition, processing aid, has been described with respect to general requirements. The project has been carried out in close collaboration with representatives from the seafood industry, and a representative from the Norwegian Food Safety Authority has been an observer.
