Better methods and routines are needed within the fishing industry, in order to monitor the quality of raw material received from the fishing vessels. It is essential that quality evaluation of raw material is based on defects that are important for the final product, regarding quality and yield.
This report deals primarily with quality defects caused by the catching and bleeding operations onboard coastal fishing vessels. Atlantic cod is used as an example species. Nine different quality defects are described and illustrated by pictures. Finally a possible method for sensory evaluation of these defects, on fresh, chilled raw material, is outlined.
