The aim of this work was to evaluate imaging spectroscopy for fish freshness assessment as well as developing tools for segmentation of fillet data from the imaging spectrograph.
Results of the analysis show that the data from the imaging spectrograph are feasible for freshness analysis; storage time of cod can be determined with an average error value of 50 hours. The method is likely to be improved by instrumental adjustments as well as selection of optimal measurement location of the fillet.
The method for segmentation automatically generates information on the location of the different areas of the fillets; loin-, belly- and tail- area.
