The Norwegian Parliament, Stortinget, has adopted a target of 15% organic food consumption in 2020. To achieve this goal, private and public food services, in particular, must reach this level. Nofima has conducted two surveys to reveal the challenges in the catering sector. A survey (2013) concluded the greatest challenges to be range of products and price. Depth interviews (2014) revealed which organic products catering missed the most, for large kitchens it is not only type of commodity, but just as much the volumes available, packaging sizes and degree of processing. Some organic products are also perceived to have an unreasonable price compared with conventional products. Both surveys are funded by Norwegian Agriculture Agency.
