This report summarizes activity and results in the project “Quality improvement of back bone saith” from 2007 to 2009. The project objectives were to improve quality and production efficiency as compared to traditional production.
The main issues to be resolved are efficient removal of guts during production. Remains of guts and liver is the main reason for discoloration and reduced quality of the product. Also a more efficient production line would favour increased quality, as slow production allows for the deterioration processes to develop. Reduced production time and lowering of temperatures during production will also enhance the quality of the product.
