The purpose of this project has been to enhance the understanding of product differentiation in the seafood industry. To meet this goal a number of different studies have been conducted at different links in the value chain for cod, haddock and salmon. The results revealed a wide range of opportunities and barriers for differentiation, for example by documenting price premiums for various product attributes in supermarkets in the UK. Findings have been widely communicated to the industry and should have substantial potential to enhance current understanding of differentiation in the seafood industry.
