The aim of this work has been to assess the possibilities for increased production of fresh processed products from the Norwegian seafood industry. This was done by exploring how the introduction of high quality vacuum packed pre rigor loin has affected the Norwegian market. The results show that the new products have contributed to a significant growth of fresh prepacked fillets in the supermarket. Further growth will depend on increased profitability in the whole value chain, marketing, product development, reduced wastage and increased shelf life.
