Portuguese tested clipfish

Fiskeriforskning has conducted a consumer survey of 10 different clipfish products in Portugal.

On an annual basis, Norway exports approximately 70,000 tonnes of clipfish, with Portugal as the most important market.

Clipfish is produced by salting and then dehydrating the fish, which is mainly cod and saithe.

In the study, 120 Portuguese evaluated appearance and taste, where the purpose was to gain more knowledge about which properties the consumers believe clipfish should have. The products that were tested included four varieties that are produced by Fiskeriforskning.

Because one knows the production history of these variants, it is possible to learn more about how different raw material qualities and production methods influence appearance and taste.

The results from the study will be available in September. The project was carried out on assignment for the Bacalao Forum.
