Biography Even Heir
I work as a research scientist in the research area Food safety and quality in Division Food Science. I work in particular with food safety to understand growth and survival of foodborne pathogens (e.g. Escherichia coli, Listeria monocytogenes, Salmonella) in food and food production environments. We apply and evaluate new technologies ,improved cleaning and disinfection strategies and combined strategies (“Hurdle technology” concept) to obtain safe, high quality food from both the agricultural and seafood industry. Knowledge transfer to the food industry is an important part. Of special interest is biofilm formation of foodborne bacteria and bacterial adaptation to food stresses affecting growth and survival in food and food production environments.

The salmon industry aims for producing smoked salmon with reduced levels of salt (NaCl).
