Biografi Simon Ballance

Jeg har vært ansatt i Nofima siden november 2007 og jobber i dag som forsker i avdelingen for Mat & Helse. Mine (undergraduate og postgraduate degrees), i henholdsvis geografi og miljø-biokjemi er fra University of Manchester, UK. Siden jeg flyttet til Norge i 2001 har jeg jobbet med karbohydrater og biopolymer. Min første jobb i Norge var en Post-Doc ved Norges Teknisk-Naturvitenskaplige Universitet (NTNU) i Trondheim (2001-2007).
Forskning
Karbohydrater og human helse
Det overordnete målet med min forskning er å studere sammenhengen mellom karbohydratinntak og human helse. Pr i dag består min forskningsportefølje av
(i) grunnleggende forskning på mekanismer ansvarlig for positive helseeffekter fra bygg, havre og gjærβ-glucaner
(ii) dynamisk in vitro modellering av cereal fordøyelse og assosiert glykemisk respons
(iii) Anvendt forskning i samarbeid med industrien for å utvikle en industriell prosess som fjerner glukose fra frukt juice med tanke på å lage en ny klasse av sunn, funksjonell mat.

β-glukaner er, på grunn av sine enkle struktur, en ideell modell for å studere effekten av kostfiber på human helse. Selv om β-glukaner allerede har vist seg å redusere postprandial blod glukose og blod kolestrol, er det fortsatt diskutert om de, eller fragmenter av, er biotilgjengelige.
Som en del av EU’s 7th Framework programme (KBBE) “Dietary fibres supporting gut and immune function – from polysaccharide to health claim” vil vi utvikle nye metoder for å bestemme og kvantifisere opptak av β-glucan ved oralt inntak.
I prosjekt (ii) forsker vi på – I samarbeid med Institute of Food Research, Norwich, UK og Leatherhead Food Research, UK – fordøyelse og tilhørende glykemisk respons av enkle havre og bygg måltider ved å bruke en state-of-the-art in vitro dynamisk mage modell. Målet er å validere modellen med in vivo målinger av blod glykose i mennesker og klarlegge nøkkelfaktorer som er ansvarlig for fordøyelse av stivelse og den tilhørende glykemiske respons.
I prosjekt (iii) som er i samarbeid med Lerum AS, Sogndal, Norway, utvikler vi en ny klasse av funksjonell frukt juice som fortsatt smaker søtt, men inneholder så å si ingen glukose. Det eneste glykemiske sukker tilstede er fruktose, som når det inntas i fravær av glukose, har vist seg (godkjent EU EFSA helse dokument) å ha helsefrembringende fordeler hvor det aller viktigste er reduseringen av (postprandial) glukose og assosiert insulin respons. Det jobbes fortløpende med å få produktet på markedet.
