Biografi Grethe Iren Andersen Borge

Jeg er seniorforsker i avdeling Mat og Helse, der vårt fokus er å bistå matprodusenter å utvikle mat for bedre helse gjennom nye produkter, forbedrede produksjonsmetoder, optimale lagringsbetingelser og tilberedningsmetoder.
Jeg leder et av de strategiske forskningsprogrammene ved Nofima,”Plantestoffer i frukt, bær og grønnsaker” (2013-2016), og er med i to COST Action nettverk, POSITIVe (plantestoffer og opptak i kroppen) og EUROCAROTEN (karotenoider).

Min forskning er for tiden knyttet til grønnsaker og kvalitet, med fokus på helserelaterte innholdsstoffer. Forskningen har som mål å få økt kunnskap om hvordan helserelaterte plantestoffer varierer i råvarer og hvordan lagring og prosessering påvirker helserelatert kvalitet.
Plantestoffer som jeg spesielt har kompetanse på er polyfenoler, glukosinolater og karotenoider, og analysemetodikk HPLC-DAD, LC-MS og metabolomics.Interesseområdet mitt er også bioaktivitet, biotilgjengelighet og effekter av plantestoffer i kroppen, med fokus på fordøyelsen. Jeg har vært involvert i forskning på hvordan mat påvirker human helse, f eks bær, frukt og grønnsaker og fiskeolje (omega-3 fettsyrer).
Min utdannelse er innen kjemi og biokjemi, med en doktorgrad i biokjemi (lipidmetabolisme i planter og menneske) i 1998 ved Universitetet i Oslo. Jeg har vært ansatt ved Matforsk/Nofima i periodene 1993-1998 og 2002-i dag.
Jeg har også jobbet som forsker ved NMBU med biofilm og patogene bakterier i meieriprodukter (1998-2002).
