Biografi Eva Veiseth-Kent

Forskningen min retter seg hovedsakelig mot kjøttkvalitet hos både landdyr og fisk. Vi vet at kjøttkvalitet er sterkt påvirket av proteinsammensetning og proteinnedbryting i musklene, og jeg jobber med ulike metoder for å studere disse prosessene i muskel. Dette inkluderer aktivitetsmålinger til ulike proteaser (calpain systemet, cathepsiner), analyser av proteinnedbryting (Western blotting, immunohistokjemi), muskelhistologi og proteomanalyser.

Jeg er utdannet Næringsmiddelkandidat (1998) og har en doktorgrad i bioteknologi (2003) fra Universitetet for miljø- og biovitenskap (UMB). Under arbeidet med doktorgraden min jobbet jeg 3 år ved USDA Meat Animal Research Center i Clay Center, Nebraska, og dette resulterte i en doktoravhandling med tittelen ”Calpain-aktivitet i post mortem muskel og den innvirkning på mørning av kjøtt”.
