Traceability

Where does the food come from? Both consumers and purchasers desire ever more information about food products. Nofima is a leading actor in the field of food traceability, and is working with mapping supply chains and developing methods and standards.

A food product has usually been through many processes on its way to the shop. The raw material has been harvested, processed, packaged and transported.

Information about what has been done to the food product on its journey is necessary for both purchasers and consumers.

Standardisation

It is important to use standards to record information, to ensure that nothing is lost on the way from raw material to final product. A standard makes it easier to exchange information (preferably electronically) and ensures that the terms used are correctly understood.
Nofima plays a central role in international work in this field. The work in developing ISO standards for the traceability of seafood (ISO 12875 and 12877) was led by our expert group in traceability. Extended versions of these standards are used in a number of other food sectors.

Process mapping and cost-benefit analysis

If traceability systems are to work along the complete value chain, the same procedures should be followed at all locations through which a product passes.

Nofima provides the food industry with recommendations and advice in this respect. We have developed and adapted methods not only to map processes in the industry, but also to analyse the costs and benefits of introducing traceability systems.

Sustainability and environmental accounting

One of the most important reasons for introducing better traceability systems is the need to document environmentally, socially and economically sustainable production. Extensive and systematic registration along the complete value chain is necessary to be able to calculate the environmental impact of a product.

Nofima plays a central role in Norwegian and international projects in which traceability contributes to climate and environmental accounting, and we have developed an environmental calculator used in the fishing industry for this purpose.
